Black garlic hummus
Ingredients
For the hummus:
- 1 can chickpeas (drained)
- 1 teaspoon sodium carbonate
- 1 clove of garlic
- 3 bulbs of black garlic
- 5 tablespoons tahini
- 2/3 cup extra virgin olive oil
- 1 teaspoon paprika
- 3 ice cubes
- Salt and pepper
For the parsley dressing:
- 1/2 cup flat leaf parsley
- 1/2 cup olive oil
- 1/2 clove garlic
- Lemon peel
- Salt and pepper
Preparation
Hummus:
- In a small pot: Combine the chickpeas and baking soda, cover with water and bring to a boil. Simmer for about 10-15 minutes (cooking with baking soda will help break down the skins of the chickpeas for a smooth texture)
- After cooking: rinse with cold water until cool and drain
- In a food processor: blend the chickpeas together with the rest of the ingredients, except the ice. Once the puree consistency is reached, gradually add the ice cubes (this not only helps to give a silky texture, but also helps to cool the hummus and prevent it from separating from the oil)
- To taste
Parsley dressing (for garnish only, not required):
- Blend the parsley, olive oil and garlic for a short time (if you blend it too much you won't have the right chunky texture)
- Season with lemon zest, salt and pepper
-> This can be served with all kinds of bread or even vegetables.
