Sea bass sashimi | 3 - 4 persons
Ingredients
- 300g fresh sea bass (or other white fish)
- Pomegranate
- Combava
- Avocado
- Bergamot
- Extra virgin olive oil
- Coriander
- Salt and pepper
Preparation
- Cut the fish into thin pieces (about 4 mm)
- Make the guacamole: put the flesh of an avocado in a bowl, squeeze the juice of half a bergamot on top, add salt and pepper and mix
- Remove the seeds from the pomegranate: keep the pink/red part and throw away the white part (for this recipe you will need about 2 tablespoons of seeds)
- Arrange everything on a plate: place the slices of fish, a quenelle of guacamole next to it, sprinkle the pomegranate seeds over it and for the finishing touch some combava peel, drizzle with olive oil and add the coriander
This is delicious, light and fresh to eat as a starter.
You can use the extra pomegranate seeds and bergamot in a fruit salad or you can squeeze the juice to drink.
